Here I explored few ramen shops and their respective ramen in a biased personal review! Now let us journey around Singapore in search of the best ramen on the island!

About each grading category (1-5) :

 

SOUP – Taste, richness, thickness.

NOODLE – The Q enjoyment! It’s more of a Taiwanese’ term to describe good noodle as Q Q~ Quantity and slickness are also factors.

INGREDIENT – Quantity and quality

BLEND – Of all good things, whether they can blend together as one is the key!

X-FACTOR– UNKNOWN

I've got this special feeling when I first walked in, it resembles the feeling when I was alone in the snow at Hokkaido walking in a warm local ramen shop. The warm feeling just gushed in not to mention Singapore is hot enough.

CHASHU UMA + KARAMASHI (spicy oil) + KAE-DAMA

Chashu Uma, the most expensive but 'best in value' as claimed (ordering the chashu on seperate plate cost S$9)

It’s said to be the same as ‘Kara-uma’ (spicy ramen on the menu) if I just add the Karamashi (S$2.5) to the ordinary soup. Kara-Uma was my favourite, so that makes Chashu Uma my favourite as well especially when I am super hungry.

 

Soup XXXX I’m bias since I like spicy food, it tastes much better with the spicy oil. The original is not exciting at all.
Noodle XXXX  Supposed to be hand made I think.
Ingredient XXXX
Blend XXX  Meat is a bit too salty contrast to the soup.
X-factor XXX  (nothing THAT special on the 3rd try!)

I only got to try it from my friend’s bowl. There’s a rich seaweed taste, very enjoyable if you do not like the spicy ramen!

KARAKA + CHASHU + TAMAGO + KAE-DAMA

This is the very first ramen I tried when Ippudo first came to Singapore, my buddy Allan was a ‘ramen runner’ and he introduced a group of us to this place. All time favourite.

Noodle XXX Small quantity of kae-dama.. though the ‘Q-ness’ is alright.

Blend XXXX  Ippudo is well blended!
X-factor XXX (maybe standard drops a little after the manager Ryu left.. doesn’t taste as good when I first remembered!)

This is supposed to be on the same menu as the Mandarin Gallery’s outlet as well. Same goodness. Original, no extra chashu tamago this time!

Special DX means the standard noodle plus all specials! That includes fatty pork, tamago and A LOT OF SPICES.

Noodle and the chicken base soup is quite unique compare to most of the pork base ramens out there.

This is not spicy at all, more chilli powder advise! Priced at 21++ with GST its considered the cheapest ‘all special’ ramen of all.

Ingredient XX  Nothing outstanding except for that overflowing greenish things.
Blend XXXX Blend is among the best!
X-factor XXX I didn’t like this on the first try, subsequently it tastes better and better. The blend is so good that just makes you want to go again for more.

CURRY RAMEN

I was a little disappointed because I’ve had tried the best curry ramen in my life at Hokodate, Japan, a small corner shop that specializes at curry ramen. This is nothing comparable, but still quite unique and good compare to the rest of Singapore’s.

For some reason they have some ‘special’ noodle (1 split into half), and I don’t like it at all. Should also give credit to their effort with hand-made noodle, coz I was fortunate to receive a chunk of combined noodle due to poor workmanship.

Blend XX  The good serving of ingredients didn’t blend together at all…
X-factor X  They have some funny branding, white, black and red, each with different customization. It’s good for some people I guess, but also mean they have nothing that stands on its own.
